Nutrition II: More on Carbohydrates

I hope you are having a good day!

I am starting to tell you that I am started the Ultraman's  training  with his right foot. I had a good feelings, I started to sleep earlier and I managed to wake up at six in the morning without having problems with fatigue during the day, which is very important because it allows me to perform well in developing my thesis. The magic is in learning how to harmonize our daily rhythm with the practice of physical activity without letting it to affects us negatively. For that we just need a good programming, we do not need special conditions either physical or economic. It's much simpler than it may seems. I'll write some "tips" that can help them in that regard.

I am glad to see how the last article has generated new questions and discussion. Is that the main idea of this space, with that we will all learn!

Today I will continue on the same line. I'll talk about some problems and misconceptions that will help us to study later the third food strategy which will help us solve problems inherent to the two already mentioned.

The presentation today will begin by recalling that simple sugars should not be confused with refined sugars. Both teaspoon sugar cane and fresh fruits contain simple sugars, but the latter also contains significant amounts of water (75% of weight in case of a banana), micronutrients (vitamins and minerals), fiber, protein and fat. As a consequence is clear that although both are simple sugars, is not expected to have the same effect on our body. In what follows I will explain this in more detail.

There is the mistaken notion that eating fruit causes problems with blood sugar, this is the basis for most of the warnings to stay away from fruit, especially sweets fruits.

Of course, blood sugar leads to outbreaks of Candida, chronic fatigue, hyper-and hypoglycemia, diabetes, and a number of other conditions and diseases, including cancer. In fact the excess of sugar is bad for our health, but you can not get too much sugar from the consumption of fresh fruit. Eating fruits is not the cause of the problems of blood sugar, the process is much more complex.

Maybe this sounds a bit counter-intuitive. Almost like saying that osteoporosis is not a problem of calcium. However, our calcium intake alone does not cause brittle bones, as well as fruit sugar alone does not cause an excess of sugar in the blood.

Eating a diet of fruit, including generous amounts of fresh sweet fruit, do not create an excess of blood sugar, at least when you're not eating a diet high in fat. In this case, the fruit sugar, moves easily, quickly enters our cells and therefore "out" quickly from our bloodstream.

There are indicators developed to quantify the effect of food on blood sugar levels, we will study a little these indicators.

The glycemic index ranks carbohydrates based on how fast they break down during digestion and therefore the speed with which these sugars enter in the bloodstream. In other words, it indicates the rate at which carbohydrates turn into sugar in the blood. The problem with this indicator is that it does not gives us information about the amount of carbohydrates found in a portion of any food. Both pieces of information are essential to understand the effect of food on blood sugar. A simple example is to consider glucose. This type of simple sugar has a high glycemic index (99). However it would be strange to think that if we consume 0.001 g of glucose, the sugar in our blood will increase significantly.

That's where the concept of glycemic load comes into play. Whereas this indicator in conjunction with the glycemic index, we can predict more accurately the degree to which a food raises blood sugar. This is because, by definition, the glycemic index measures the quality of carbohydrate but not quantity. The glycemic load is calculated by multiplying the glycemic index of a food by the amount of available carbohydrate per serving (grams of carbohydrates minus fiber), dividing the result by 100. In this case, the fruits, which are mostly water, has a low glycemic load despite having a high glycemic index. For example, the banana glycemic index is 52 (remember that glucose is 99). But because the water represents 75% of the weight of a banana, its glycemic load is only (in case of a medium banana)

In general, all fruits have a low glycemic load. In this regard I must say it is better to eat fresh fruit, this because the drying and dehydration remove water to the fruit and naturally increases the glycemic load, these processes rise sugars to levels that the body is not designed to handle. It is important to eat whole fruit, since fruit fiber keeps the rate of absorption of sugar in its natural level. In all cases and whole, fresh, ripe, raw foods is the best way to proceed.

We can say that the speed at which sugar enters the blood is not really the most important factor. When fruits are eaten whole with their fiber intact, as part of a diet low in fat, sugar, in effect, enters the bloodstream relatively quickly. But these conditions also allow you to leave just as quickly, making them the ideal food, providing the perfect fuel for our body.

The American Diabetes Association published the following: "... the use of added fructose as a sweetener is not recommended, however, no reason to recommend that people with diabetes avoid naturally occurring fructose in fruits, vegetables and other foods."

Then it is natural to ask why we have misconceptions in this point. The real culprit of rising blood sugar is fat.

The mechanism that causes uncontrolled blood sugar is very easy to understand. To do this we need to understand the path that sugar follows into our body.

To be used as fuel for our cells, the sugar we eat follow a journey that can be separated into three stages through the body:

• Stage 1: The sugars begin to explore the digestive tract when eaten.

• Stage 2: They pass through the intestinal wall into the bloodstream.

• Step 3: Then go smoothly and easily from the bloodstream into our cells. This occurs quickly, often within minutes.

When we eat a diet high in fat, sugar is trapped in stage 2, and the body work overtime, sometimes to the point of exhaustion and illness, in an effort to move sugar from our bloodstream. While this happens, sugar accumulates in the blood, and this accumulation is sustained, which wreaks havoc on the body as Candida, fatigue, diabetes, etc.

What happens in the presence of fat that causes sugar to accumulate in our blood stream?

The process has to do with an organ called the pancreas. Under the direction of the brain, the pancreas is responsible for producing a hormone called insulin. One of the functions of insulin is to join the molecules of sugar in the blood and then find a receiver of insulin in the blood vessel wall. Insulin can carry the sugar molecule through the membrane of blood vessels to the interstitial fluid (the fluid between cells) and escort sugar into the cells themselves.

In the body, fat provides many functions needed of insulation, including the conservation of body heat, preventing too much water from escaping through the skin, and protection of nerve fibers. But too much fat in the bloodstream creates some negative effects of isolation. When we eat too much fatty foods, it creates a thin layer of fat in the blood vessel wall, i.e. at sites where the receptors for insulin and sugar molecules. These fats can stay a full day or more in blood, and during this time inhibiting normal metabolic activity, and prevent these different structures interact to each other.

That is why too much fat in the blood prevents the movement of sugar in the bloodstream. This results in an overall increase in blood sugar. This product, sugars continue to travel through the digestive tract (stage 2), but can not be delivered to the cells (step 3).

Of course there is scientific evidence that supports these claims, both to help us understand why the diets commented yesterday may generate increases in the level of insulin.

• A quarter pound of beef raises insulin levels in diabetics as much as a quarter pound of sugar. (Diabetes Care 7)

• Cheese and beef insulin levels rise to levels higher than the "dreaded" carbohydrate foods like pasta. Journal of Clinical Nutrition 50 (1997): 1264)

• A single hamburger beef, three cheese slices increased insulin levels more than two cups of cooked pasta. Journal of Clinical Nutrition 50 (1997): 1264)

With all this seems normal, to consider that the disorder of blood sugar is actually a disorder of fat in the blood!

To respond accurately to one of yours questions, I would say that our body weight is influenced considerably by our fat percentage and the amount of fluid that is retained in our cells. Both processes are a direct consequence of the amount of fat and protein in our diet and not the amount of carbohydrates that we consume, this of course, as long as we consume the right amount of calories related to our level of activity. In fact, a diet rich in fresh fruits, will naturally lead us to lower our body fat percentage and at the same time to release much of the water that is retained in our cells.

I hope that today's delivery has been of interest to you. Soon we will discuss the function, effect and optimal amounts of fat and protein in our diet, which reaffirm the confirmed today.

Nutrición II: Algo más sobre los Hidratos de Carbono

Espero estén teniendo un buen día!

Les cuento que comencé los entrenamientos con vistas al Ultraman con el pie derecho. He tenido muy buenas sensaciones, he comenzado a dormir más temprano y he logrado despertar a las seis de la mañana sin tener problemas de cansancio durante la jornada, lo que es muy importante ya que me permite rendir también en el desarrollo de mi tesis. La magia están en aprender a compatibilizar nuestro ritmo diario con la práctica de la actividad física sin que esto nos afecte negativamente. Para ellos sólo necesitamos una buena programación, no necesitamos condiciones especiales ni físicas ni económicas. Es mucho más simple de lo que puede parecer. Pronto escribiré algunos "tips" que pueden ayudarlos en este respecto.

Me alegra ver que la última entrega generó nuevas dudas y discusión. Es esa la idea principal de este espacio, con ello todos aprenderemos!!

Hoy seguiré en la misma línea. Hablaré acerca de algunos problemas y concepciones erróneas que nos pueden ayudar más adelante a estudiar la tercera estrategia alimentaria que nos ayudará a resolver los problemas inherentes a las dos ya mencionadas.

Comenzaré la exposición de hoy recordando que no debemos confundir azúcares simples con azúcares refinados. Ambas, cucharadita de azúcar de caña y una fruta fresca, contienen azúcares simples, pero la segunda contiene también cantidades importantes de agua (75% del peso en caso de un plátano), de micronutrientes (vitaminas y minerales), fibras, y en menor cantidad proteínas y grasas. De este hecho queda claro que si bien ambos son azúcares simples, es de esperar que no tengan el mismo efecto sobre nuestro organismo. En lo que sigue explicaré este hecho en más detalle.

Existe la noción errónea de que comer fruta causa problemas de azúcar en la sangre, esta es la base de la mayoría de las advertencias de mantenerse alejados de las frutas, especialmente frutas dulces.

Por supuesto, azúcar en la sangre da lugar a brotes de Cándida, fatiga crónica, hiper e hipoglucemia, diabetes, y una serie de otras condiciones y enfermedades, incluso cáncer. El exceso de azúcar de hecho es malo para nuestra salud, pero no es posible conseguir el exceso de azúcar a partir del consumo de fruta fresca. Comer frutas no es la causa de los problemas de azúcar en la sangre, el proceso es mucho más complejo.
Puede ser que esto les suene un poco contra-intuitivo. Casi como decir que la osteoporosis no es un problema de calcio. No obstante, nuestra ingesta de calcio no produce por si sola huesos quebradizos, así como el azúcar de la fruta por sí sola no causa un exceso de azúcar en la sangre.

Comer una dieta de fruta, incluidas cantidades generosas de frutas dulces frescas, no genera un exceso azúcar en la sangre, al menos cuando no se está comiendo una dieta alta en grasa. En este caso, el azúcar de la fruta, se mueve con facilidad, entra rápidamente en nuestras células y por tanto "sale" rápidamente de nuestro torrente sanguíneo.

Existen indicadores creados para cuantificar el efecto de los alimentos sobre el nivel de azúcar sanguíneo, estudiemos un poco estos indicadores.

El índice glicémico (o glucémico) clasifica los carbohidratos sobre la base de qué tan rápido se descomponen durante la digestión y por lo tanto la rapidez con que estos azúcares entran en el torrente sanguíneo. En otras palabras, indica la rapidez a la que los carbohidratos se convierten en azúcar en la sangre. El problema con este indicador es que no nos entrega información respecto a la cantidad de hidratos de carbono que se encuentra en una porción de cualquier alimento. Ambos elementos de información son esenciales para entender el efecto de un alimento sobre el azúcar de la sangre. Un ejemplo sencillo es considerar la glucosa. Este tipo de azúcar simple tiene un índice glicémico altísimo (99). Sin embargo sería extraño pensar que si consumimos 0,001 gr de glucosa, el nivel de azúcar en nuestra sangre aumentará considerablemente.

Ahí es donde el concepto de carga glisémica entra en juego. Considerando este indicador en conjunto con el índice glicémico, podemos predecir con mayor precisión el grado en que un alimento eleva la glucosa en la sangre. Esto porque, por definición, el índice glicémico mide la calidad de los hidratos de carbono pero no la cantidad. La carga glicémica se calcula multiplicando el índice glicémico de un alimento por la cantidad de hidratos de carbono disponibles por porción (gramos de hidratos de carbono menos fibra), dividiendo el resultado por 100. En este caso, las frutas, que son en su mayoría agua, tiene una carga glicémica baja a pesar de tener un índice glicémico alto . Por ejemplo, el índice glicémico del plátano es 52 (recordemos que el de la glucosa es 99). Pero debido a que el agua representa el 75% del peso de un plátano, su carga es de sólo (en caso de un plátano mediano)

En general, todas las frutas tienen una carga glicémica baja. En este sentido debo decir que es mejor comer la fruta fresca, ya que el secado y deshidratación, al quitar agua a la fruta, aumenta naturalmente la carga glicémica, concentrando los azúcares de la fruta a niveles que el cuerpo no está diseñado para manejar. Es importante comer fruta entera, ya que la fibra de la fruta mantiene la velocidad de absorción del azúcar en su nivel natural. En todos los casos y con todos los alimentos, entero, fresco, maduro, crudo y sin procesar es el mejor camino a seguir.

Podemos decir entonces que la velocidad a la que el azúcar entra en la sangre no es realmente el factor más importante. Cuando las frutas se comen enteras, con sus fibras intactas y como parte de una dieta baja en grasa, el azúcar en efecto, entra al torrente sanguíneo con relativa rapidez. Pero estas condiciones también le permiten salir con la misma rapidez, convirtiéndolas en el alimento ideal, que proporciona el combustible perfecto para nuestro cuerpo.

La Asociación Americana de Diabetes publicó lo siguiente: "...el uso de fructosa añadida como edulcorante no es recomendado, sin embargo, no hay razón para recomendar que las personas con diabetes eviten la fructosa natural en frutas, verduras y otros alimentos."

Entonces, es natural preguntar el por qué de nuestra mala concepción en este respecto. El verdadero responsable de las alzas de azúcar en la sangre es la grasa. Es común el que tengamos dietas ricas en grasa, de hecho bastante más común de lo que pensamos. De esto tratará la próxima entrega.

El mecanismo que causa el descontrol del azúcar en la sangre es muy fácil de entender. Para ello necesitamos comprender el camino que sigue el azúcar dentro de nuestro cuerpo.

Para ser utilizado como combustible para nuestras células, los azúcares que comemos realizan un viaje que puede separarse en tres etapas a través de nuestro cuerpo:
 • Etapa 1: Los azúcares comienzan a recorrer el tracto digestivo cuando los comemos. • Etapa 2: Ellos pasan a través de la pared intestinal hacia el torrente sanguíneo. • Etapa 3: A continuación pasan sin problemas y con facilidad de la circulación sanguínea a nuestras células. Esto se produce rápidamente, a menudo en cuestión de minutos.
Cuando comemos una dieta alta en grasa, el azúcar se queda atrapada en la etapa 2, y el cuerpo trabaja horas extras, a veces hasta el punto del agotamiento y la enfermedad, en un esfuerzo para mover el azúcar de nuestro torrente sanguíneo. Mientras esto ocurre, el azúcar se acumula en el la sangre, y es esta acumulación sostenida, la que causa estragos en el cuerpo en forma de Candida, fatiga, diabetes, etc.

¿Qué es lo que ocurre en presencia de grasa que ocasiona que el azúcar se acumulan en nuestro torrente sanguíneo?

El proceso tiene que ver con un órgano llamado páncreas. Bajo la dirección del cerebro, el páncreas es responsable de producir una hormona conocida como insulina. Una de las funciones de la insulina es unirse a las moléculas de azúcar en la sangre y luego encontrar un receptor de la insulina en la pared de los vasos sanguíneos. La insulina puede transportar la molécula de azúcar a través de la membrana de los vasos sanguíneos al líquido intersticial (el líquido entre las células) y escoltar el azúcar dentro de las propias células.
En el cuerpo, la grasa proporciona muchas funciones necesarias de aislamiento, incluyendo la conservación de calor del cuerpo, evitando que demasiada agua se escape a través de la piel, y la protección de las fibras nerviosas. Pero el exceso de grasa en el torrente sanguíneo crea algunos efectos negativos de aislamiento. Cuando comemos alimentos grasos en exceso, se crea una capa fina de grasa en la pared de los vasos sanguíneos, es decir, en los sitios donde se encuentran los receptores de la insulina y de las moléculas de azúcar. Estas grasas pueden permanecer un día completo o más para en la sangre, y durante este tiempo inhibir la actividad metabólica normal, y la evitar el que estas estructuras diferentes se comuniquen entre sí.
Es por esto que demasiada grasa en la sangre impide el movimiento de azúcar en el torrente sanguíneo. Esto se traduce en un aumento general de azúcar en la sangre. Producto de esto, los azúcares siguen viajando por el tracto digestivo (etapa 2), pero no pueden ser entregados a las células (etapa 3).

Existe por supuesto evidencia científica que apoya estas afirmaciones, a la vez de ayudarnos a comprender el por qué las dietas comentadas ayer pueden generar alzas en el nivel de insulina.

• Un cuarto de libra de carne eleva los niveles de insulina en los diabéticos tanto como un cuarto de libra de azúcar. (Diabetes Care 7) • Queso y carne elevan los niveles de insulina a niveles más altos que los "temidos" alimentos ricos en carbohidratos como las pastas. Con todo esto parece normal entonces considerar entonces que los trastornos de azúcar en la sangre en realidad son trastornos de grasa en la sangre!

Para responder de manera precisa a una de sus preguntas, diré que nuestro peso corporal, es influenciado de manera importante por nuestro porcentaje de grasa y por la cantidad de líquido que se encuentre retenido en nuestras células. Ambos procesos son consecuencia directa de la cantidad de grasa y proteínas presente en nuestra dieta y no  de la cantidad de carbohidratos que consumamos, esto claro está, siempre y cuando consumamos una cantidad de calorías que esté acorde a nuestro nivel de actividad. De hecho, una dieta rica en frutas frescas, nos llevará naturalmente a bajar nuestro porcentaje de grasa y al mismo tiempo, liberar gran parte del agua que se encuentra retenida en nuestras células.

Nutrition I: Carbohydrates

I hope you are doing well. I hope that the weekend has given you the opportunity to enjoy with your family and refuel your energies for the week which just begun.

Today I will give some general ideas about nutrition. It is important to note that on this issue there are so many different views as specialists in the area, each person is a different world and in general there is no generic recipe that provides us everything we need. Each person has different goals, live a different reality and have different histories, this translates into different requirements and therefore different strategies in dealing with nutritional planning. Yet there are some fundamental concepts on which most experts agree, and which can help us, by simple changes, to improve our quality of life.

It is important to clarify our goals before we start talking about sports nutrition, because this will condition all the strategy. In this point I must say that while sports nutrition often focuses on maximizing our performance, this does not necessarily go hand in hand with maximizing our health and well-being. In fact, through the management of nutrition, we can never achieve maximize our health, well-being  and our performance at the same time. Ideally then, to get the right balance between health, welfare and performance, consistently with our aspirations seems to be the best strategy.

A common mistake in those sports, is the indiscriminate use of products made to improve our performance. Most times, we are not clear about the damage they may cause to our health in the long term. Damages that may be justifiable in case of a professional who must improve their marks as work, but are not justified in case of someone which is doing sport to be healthy.

It is clear that the quality of our nutrition has a direct influence on the prescience of many of the diseases that affect us as a society. This is the case of cancer, obesity, hypertension, osteoporosis, diabetes, among others. The presence of these diseases in our society grows each year, all hand in hand with the growing presence of poor nutritional food and bad eating habits.

The first to take toward our goal is to understand the role of each nutrient in our body.

Carbohydrates: Sugar, the ideal fuel.

It is true that our body can use any macronutrient, carbohydrate, protein or fat for energy, by converting the macronutrient in simple sugar as glucose, this is the preferred fuel for all cells in our body. In this respect are the carbohydrates that are more easily processed.

Many of us think in food as a source of energy. This misconception has been amassed by the misuse of the concept in advertising. In the scientific context, the term energy refers to electricity produced by the brain during sleep. In wakefulness, the rate at which we use this energy is greater than the rate at which this is created, why, after a few hours, we will be "out of energy". Recuperating after a few hours of sleep, we wake up full of energy again, ready to face another day.

On the other hand, food is considered as fuel. Through the process of digestion, we used our own energy to burn fuel (food) and in the process release energy in them and use it for our benefit.

To simply explain the difference, consider a car. It is clear that the fuel (petrol, diesel) is quite different from the energy provided by the battery. Both components are useless without the other, but combined they are capable of generating movement and activity.

As human beings we have a very limited capacity to store carbohydrates or protein, in fact so as to ensure future use as energy, our body must store these nutrients as fat. If you do not have enough carbohydrates to meet our requirements, our bodies require fat as a fuel element, the process by which our body converts fat into sugar is called gluconeogenesis (creation of sugar). While this process can help in extreme situations, in the absence of carbohydrates, gluconeogenesis does not produce only glucose but also produces a substance called ketons. The ketons have a similar effect to alcohol on the brain's chemical activity, and adversely affect our ability to make decisions.

Advances in the understanding carbohydrates, allow us to categorize this nutrient into three categories

1 .- Simple sugars (one or two sugar molecules): They can be found in a wide variety of foods, including fruits, vegetables, honey and milk. The main exponents of this category are glucose, fructose, galactose, dextrose, lactose and maltose.

2 .- Oligosaccharides (composed of 3-9 sugar molecules): Some are completely digestible while others are not. Among them are maltodextrin, raffinose, verbascose, among others.

3 .- Polysaccharides (10 or more sugar molecules) found starch present in rice, grains, legumes, and fiber in fruits, vegetables and grains.

The first two members of this classification are those that provide the nutritional information can be found on product labels. Our body can directly use simple sugars and can break down the oligosaccharides into simple sugars to convert it and use as fuel.

Overall, we found the simple carbohydrates in the form of refined sugars (extracted from fruits, grains and sugar cane) or complete simple sugars like those found in fruits. Unlike carbohydrates in the third group, those belonging to the first two categories are detected by taste buds present at the tip of our tongue.

Unfortunately, it exists because of the lack of information, we tend to consider the simple sugars and refined sugars as the same thing. Regardless of the simple sugar found in foods such as whole fruit is in essence profoundly different.

There are two main trends in the community in tackling the daily intake of carbohydrates.

The first is to have a low consumption of carbohydrates at the same time we increase our consumption of fat. As human beings need a certain amount of fuel to perform in our daily activities. By decreasing the amount of carbohydrates, necessarily must obtain those calories from another source. The fact that all natural sources of protein are inextricably linked to natural sources of fat, this translates to an increase in our consumption of fat. In 2001, it published a study showing that those who follow a diet low in carbohydrates lose weight only because their daily calorie intake is lower than its consumption, it can have harmful effects on the health of the individual (see Journal of Obesity Research).

Some of the consequences of such strategies are as follows,

- Malnutrition.
- Cancer, osteoporosis and diabetes.
- Heart disease.
- Poor performance in physical activities.
- Increased blood pressure.
- Rapid decline in blood pressure upon standing.
- Sudden death.

Given the problems that a diet rich in fat can generate, and given the daily requirements of micronutrients (more on them in another issue) not present in refined foods, the second approach is based in having a high intake of complex carbohydrates and at the same time reduce our consumption of fat. In principle, this approach may seem successful. The problem is that the nutritional quality of food declines significantly with the cooking and complex carbohydrates are found mainly in grains and legumes, which must be cooked to be digested. The cooking process in most cases required to perform the dehydration of cooked food, this loss of water brings about a significant loss of vitamins and generate a condition known as acid toxicity, which can lead to who consume this type diets to develop conditions such as cancer, arthritis, hypothyroidism, chronic fatigue, among others. Of all the vitamins, vitamin C appears to be the most important in maintaining tissue integrity and proper functioning of our immune system. Interestingly of all the vitamins, vitamin C is the most easily is destroyed by heat, a fact that will have serious consequences if such regime is not accompanied by a significant intake of fresh fruits.

For my presentation today will reach here. I hope at this point, we have a better idea of the importance of good planning is our food strategy and the role that carbohydrates play in our body.

We also discussed the main weaknesses of the two most popular approaches about carbohydrates consumption and this is where I would like to ask you considering the given information, to you to propose a third strategy to solve the problems in the first two. Next time I will give the solution to the problem, but I advance that, strangely, is the most logical and natural.

Nutrición I: Hidratos de carbono

Hola a todos!

Espero se encuentren muy bien. Espero que el fin de semana les haya dado la oportunidad de disfrutar junto a los suyos y con esto reponer energías para la semana que ya comenzó.

Hoy daré algunas ideas generales acerca de nutrición. Es importante recalcar que sobre este tema existen tantos diferentes puntos de vista como especialistas en el área, cada persona es un mundo diferente y en general no existe una receta genérica que nos proporcione todo lo que necesitamos. Cada persona tendrá diferentes objetivos, vivirá una realidad diferente y tendrá diferentes historiales, esto se traduce en diferentes requerimientos y por ende en diferentes estrategias a la hora de abordar su planificación nutricional. Aún así existen algunos conceptos fundamentales en los que la mayoría de los especialistas coinciden y que pueden permitirnos, mediante cambios sencillos, a mejorar nuestra calidad de vida.

Es importante aclarar nuestros objetivos antes de comenzar a hablar de nutrición deportiva, el que condicionará completamente la estrategia a seguir. En este respecto debo decir que si bien muchas veces la nutrición deportiva se centra en maximizar nuestro rendimiento, esto no va necesariamente de la mano con la maximización de nuestra salud y bienestar. De hecho, mediante el manejo de la nutrición, jamás podremos lograr maximizar nuestra salud y bienestar al mismo tiempo que nuestro rendimiento. Lo ideal es entonces, conseguir el correcto equilibrio entre salud, bienestar y rendimiento, en consecuencia con nuestras aspiraciones.

Un error común en quienes practicamos deporte, es el uso indiscriminado de productos hechos para mejorar nuestro rendimiento. La mayoría de las veces, no tenemos claros los perjuicios que pueden provocar en nuestra salud al largo plazo. Perjuicios que pueden ser justificables en caso de un profesional quien debe mejorar sus marcas como actividad laboral, pero que no son justificados en caso de alguien que practica deporte de manera aficionada.

Es evidente que la calidad de nuestra nutrición tiene una influencia directa en la presciencia de muchas de las enfermedades que nos afectan como sociedad. Este es el caso del cáncer, obesidad, hipertensión, osteoporosis, diabetes, entre otras. La presencia de estas enfermedades en nuestra sociedad crece cada año, todo esto de la mano con la creciente presencia de alimentos con pobre aporte nutricional y malos hábitos alimentarios.

El primer a dar hacia nuestro objetivo es el comprender la función que cumple cada nutriente en nuestro organismo.

HIDRATOS DE CARBONO : Azúcar, el combustible ideal.

Es cierto que nuestro cuerpo puede utilizar cualquier macronutriente, hidratos de carbono, proteínas o grasa, como energía, mediante la conversión de este macronutriente en azúcar simple, que en forma de glucosa es el combustible  preferido de todas las células de nuestro cuerpo. En este respecto son los hidratos de carbono los que son más fácilmente transformados.

Muchos pensamos en los alimentos como fuente de energía. Esta mala concepción ha sido masificada por el mal uso de del concepto en campañas publicitarias. En el contexto científico, el término energía hace referencia a la corriente eléctrica producida por nuestro cerebro durante el sueño. En vigilia, la tasa en que usamos esta energía es mayor a la tasa en que esta se produce, razón por la cual, pasadas algunas horas, nos encontraremos "sin energía". Luego de unas reponedoras horas de sueño, nos despertaremos nuevamente llenos de energía, listos para afrontar un nuevo día despiertos.

Por otro lado, los alimentos son considerados como combustible. Mediante el proceso de digestión, nuestro utiliza su propia energía para quemar el combustible (comida) y liberar en el proceso la energía que en ellos se encuentra y utilizarla para nuestro beneficio.

Para explicar de manera simple la diferencia, consideremos un automóvil. Es claro que el combustible (bencina, diésel) es bastante diferente de la energía otorgada por la batería. Ambos componentes son inútiles sin el otro, pero combinados son capaces de generar movimiento y actividad.

Como seres humanos tenemos una muy limitada capacidad de almacenar carbohidratos o proteínas, de hecho  de modo de asegurar su posterior utilización como energía, nuestro cuerpo debe almacenar estos nutrientes en forma de grasa. Si no tenemos suficientes carbohidratos para satisfacer nuestros requerimientos, nuestro cuerpo requerirá a las grasas como  elemento combustible, el proceso mediante el cual nuestro cuerpo convierte la grasa en azúcar es denominado glucogénesis (creación de azúcar). Si bien este proceso puede ayudarnos en situaciones extremas, en ausencia de carbohidratos la glucogénesis no sólo genera glucosa sino también una sustancia denominada ketones. Los ketones tienen un efecto similar al alcohol sobre la actividad química en el cerebro, y afectan negativamente a nuestra capacidad de decisión.

Los avances en la comprensión de este nutriente, nos permiten clasificar los hidratos de carbono en tres categorías

1.- Azúcares simples (una o dos moléculas de azúcar): Podemos encontrarlos en una amplia variedad de alimentos, incluidas frutas, vegetales, miel y leche. Los principales exponentes de esta categoría son la glucosa, fructosa, galactosa, dextrosa, lactosa y maltosa.

2.- Oligosacáridos (compuestos por 3-9 moléculas de azúcar): Algunos oligosacáridos son completamente digeribles mientras que otros no lo son. Entre ellos encontramos la maltodextrina, rafinosa, verbascosa, entre otras.

3.- Polisacáridos (10 o más moléculas de azúcar): Encontramos los almidones, presentes en el arroz, granos, legumbres, y las fibras presentes en la fruta, vegetales y granos.

Los dos primeros miembros de esta clasificación son los que constituyen la información nutricional que podemos encontrar en las etiquetas de los productos. Nuestro cuerpo puede utilizar directamente los azúcares simples y puede romper los oligosacáridos, para convertirlos en azúcares simples y con esto utilizarlos como combustible.

En general encontramos los carbohidratos simples en forma de azúcares refinados (extraídos de las frutas, granos y azúcar de caña) o azúcares simples completos como los que encontramos en las frutas. A diferencia de los hidratos de carbono del tercer grupo, los pertenecientes a las dos primeras categorías son detectados mediante las papilas gustativas presentes en la punta de nuestra lengua.

Desafortunadamente, existe a causa de la falta de información, tenemos la tendencia a considerar los azúcares simples y azúcares refinados como una misma cosa. Sin considerar que el azúcar simple completo presente en alimentos como las frutas es en esencia profundamente diferente.

Existen en la comunidad dos principales tendencias a la hora de afrontar el consumo diario de hidratos de carbono.

La primera consiste en tener un consumo bajo en hidratos de carbono a la vez que aumentamos nuestro consumo de grasa. Como seres humanos necesitamos una determinada cantidad de combustible para rendir en nuestras actividades diarias. Si disminuimos la cantidad de hidratos de carbono, necesariamente deberemos obtener esas calorías desde otra fuente. Del hecho que todas las fuentes naturales de proteína están inevitablemente ligadas a fuentes naturales de grasa, esto de traduce en un aumento en nuestro consumo de grasa. En el año 2001, se publicó un estudio que muestra que quienes siguen una dieta baja en hidratos de carbono pierden peso únicamente dado que su ingesta diaria de calorías es inferior a su consumo, hecho que puede tener consecuencias nocivas sobre el estado de salud del individuo (ver Journal of Obesity Research).

Algunas de las consecuencias de este tipo de estrategias son las siguientes,

- Desnutrición.
- Cáncer, osteoporosis y diabetes.
- Enfermedades cardíacas.
- Bajo rendimiento en actividades físicas.
- Aumento de la presión sanguínea.
- Rápido decaimiento de la presión sanguínea al ponerse de pie.
- Muerte súbita.

Dados los problemas que una dieta rica en grasas puede generar, y dados los requerimientos diarios de micronutrientes (hablaremos de ellos en otra entrega) no presentes en los alimentos refinados, el segundo enfoque se basa tener un alto consumo de carbohidratos complejos a la vez de reducir nuestro consumo de grasa. En principio, este enfoque podría parecer acertado. El problema es que la calidad nutricional de los alimentos decae de manera significativa con la cocción y los hidratos de carbono complejos se encuentran principalmente en granos y legumbres, que deben ser cocinadas para ser digeridas. El proceso de cocción en la mayoría de los casos requiere llevar a cabo la deshidratación del alimento cocinado, esta pérdida de agua trae consigo una significante pérdida de vitaminas, además de generar un estado conocido como toxicidad ácida, que puede llevar a quién consume este tipo de dietas a desarrollar afecciones como cáncer, artritis, hipotiroidismo, fatiga crónica, entre otras. De entre todas las vitaminas, la vitamina C aparece como la más importante en la mantención de la integridad de tejidos y el buen funcionamiento de nuestro sistema inmunológico. Curiosamente de todas las vitaminas, la vitamina C es la que más fácilmente es destruida por el calor, hecho que tendrá serias consecuencias si este tipo de régimen no es acompañado por una ingesta importante de frutas frescas.

Por hoy mi exposición llegará hasta aquí. Espero en este punto, tengamos una mejor idea de la importancia que representa una buena planificación de nuestra estrategia alimentaria y del rol que juegan los hidratos de carbono en nuestro organismo.

Comentamos también los principales defectos de los dos enfoques más populares y es aquí donde les pediré que, dado lo aprendido, me propongan una tercera estrategia que resuelva los problemas presentes en las dos primeras. En la próxima entrega daré la solución al problema, pero les adelanto que extrañamente, es la solución más lógica y natural.

Becoming a jogger

Hi everyone!

I thank you for your support again and again. I hope that the topics covered in this space are useful for you. It is for this reason that I ask you to send me your questions so that we thus learn together.

Today I took up jogging. It was a little more than forty-five minutes, a very soft run with my friend Erwan. A new field and a good conversation made a great time. It is important to pay careful attention to the intensity at this time. The good feeling, not feeling tired or having sore muscle soreness, does not mean that your body is fully recovered. It is best to start gently and with this, speed up the recovery process and avoid creating possible causes of injury. I also started to sleep earlier and get up earlier too. Tomorrow I'll try to get up at 6:20 to start the day with a good cycling training. In the afternoon, I will have swimming as fun.

There are many people who would like to start jogging. The sport has many benefits for our body. The problem in the beginning is that we all know how slowly introduce this type of activity in our lives. Many will put our feet in our shoes and try jogging a certain amount of time. Then try to increase the frequency with which we carry out this type of workouts. Sometimes it is more difficult or more easy, even when we do the same route. After a while, we may begin to notice that we do not have the same desire. Maybe some day even we do not have enough motivation to beat the cold weather time or minor complications. It may surprise you but this lack of motivation is natural given our training strategy.

At first it is important to note that physical exercise can help many levels of our life. Its benefits range from being an efficient way to control our weight, to improve the quality of our dream or even our personal relationships. It is for this reason it is important to introduce physical exercise in our lives permanently, and it is therefore important that this activity coexists with other aspects of our daily life. I should say that I am agree with Dean Karnazes when he says that the biggest difference between a runner who seeks performance exceeding their personal best or competing against others, and a jogger, is that the second or at least still able to have control over all aspects of his life, allowing him to share with his loved ones, being a father, husband, friend, worker. Therefore from my point of view is important to keep the second spirit, which will allow us to enjoy our lives in deep way.

For those who want to start jogging, gently introducing this activity in your life, I will propose a training plan that will allow after a month, get to jogging 20 minutes continuously, avoiding the discouragement that an improper training can generate.

Week 1
Monday: 20 minute walk.
Tuesday: Rest.
Wednesday: 20 minutes walk.
Thursday: Rest.
Friday: 9 minutes walk + 2 minutes jog + 9 minutes walk.
Saturday: Rest.
Sunday: 8 minutes walking + 4 minutes jogging + 8 minute walk.

Week 2
Monday: 25 minute walk.
Tuesday: Rest.
Wednesday: 7 minutes walk + 6 minutes jog + 7 minutes walk.

Friday: 4 minute walk + 4 minutes  jog + 4 minutes walk + 4 minutes jog + 4 minute walk.

It is important to add some stretching exercises at the end of every workout and remember the advices given in the article on hydration for low intensity workouts.

There are several aspects to highlight in the program. You will notice that the number of minutes to train each week is slowly increasing. This is common and responds to the available theory for one of the most complex aspects of sports planning, called periodization. Soon I will talk more on this subject, which undoubtedly, will keep us busy for several days.

I say goodbye for now, in the next publication will give you some nutritional guidelines that can accompany a workout as I have proposed. If anyone is interested in the future (four weeks from today) I will publish the second month of this planning.

Convertirse en un trotador

Hola a todos!

Quiero agradecer vuestro apoyo una y otra vez. Espero que los temas cubiertos en este espacio sean de utilidad. Es por este motivo que les pido me hagan llegar sus inquietudes para que podamos así, aprender juntos.

Hoy retomé el trote. Fueron poco más de cuarenta y cinco minutos muy suaves junto a Erwan. Un terreno nuevo y una buena conversación durante toda la salida hicieron que pasáramos un muy buen momento. Es importante cuidar la intensidad en este momento. El tener buenas sensaciones, el no sentir cansancio o dolor muscular, no significa que nuestro cuerpo esté totalmente recuperado. Es mejor comenzar dulcemente y con esto acelerar el proceso de recuperación y evitar crear causas que desencadenen en posibles lesiones. He empezado también a dormir más temprano y a levantarme más temprano también. Mañana intentaré levantarme a las 6:20 para comenzar el día con un buen entrenamiento de ciclismo. En la tarde, será la natación lo que entretendrá.

Hay muchas personas a las que le gustaría comenzar a trotar. El trote como deporte supone muchos beneficios para nuestro organismo. El problema en un comienzo es que no todos sabemos como introducir lentamente este tipo de actividad en nuestra vida. Muchos meteremos nuestros pies dentro de nuestras zapatillas e intentaremos trotar una cierta cantidad de tiempo. Luego intentaremos aumentar la frecuencia con la que realizamos este tipo de salidas. Algunas veces será más difícil y otras más fácil, aún cuando hagamos el mismo recorrido. Pasado un tiempo, es posible que comencemos a notar que no tenemos las mismas ganas. Puede ser que algunos días inclusive no tendremos la motivación suficiente como para vencer a las bajas temperaturas o las pequeñas complicaciones horarias. Puede sorprenderlos pero esta falta de motivación es natural dada nuestra estrategia de entrenamiento.

En un comienzo es importante considerar que la realización de actividad física puede ayudarnos múltiples planos de nuestra vida. Sus beneficios van desde ser una forma eficiente de controlar nuestro peso, hasta mejorar la calidad de nuestro sueño o nuestras relaciones personales. Es por esta razón que es importante introducir la realización de actividad física en nuestra vida de forma permanente y para ello es importante que esta actividad conviva con los demás aspectos de nuestro día a día. Me atrevería a decir que la gran diferencia que existe entre un corredor, quien busca rendimiento superando sus marcas personales o compitiendo contra otros, y una persona aficionada al trote, es que el segundo sigue teniendo o al menos pudiendo tener control sobre todos los aspectos de su vida, lo que le permite compartir con sus seres queridos, rendir como padre, marido, amigo, trabajador. Por esto desde mi punto de vista es importante mantener el segundo espíritu, lo que nos permitirá disfrutar en profundidad de nuestra vida.

Para aquellos que quieran comenzar a trotar, introduciendo dulcemente esta actividad en su vida, propondré a continuación una pequeña planificación que les permitirá al cabo de un mes, llegar a trotar 20 minutos continuamente, evitando el desánimo que una programación inadecuada puede generar.

Lunes: 20 minutos de caminata.
Martes: Descanso.
Miércoles: 20 minutos de caminata rápida.
Jueves: Descanso.
Viernes: 9 minutos de caminata + 2 minutos de trote suave + 9 minutos de caminata.

Es importante agregar algunos ejercicios de elongación al final de cada entrenamiento y recordar las recomendaciones dadas en el artículo acerca de la hidratación para entrenamientos de baja intensidad.

Hay varios aspectos a remarcar en el programa. Notarán que la cantidad de minutos a entrenar aumenta lentamente semana a semana. Esta es una práctica habitual y responde a la teoría disponible respecto a uno de los aspectos más complejos de la planificación deportiva, llamado periodización. Pronto ahondaré más en este tema, que sin lugar a dudas, nos mantendrá ocupados durante varios días.

Me despido por ahora, en la siguiente entrega daré algunas directrices nutricionales que pueden acompañar a un entrenamiento como en que acabo de proponer. Si alguien está interesado, en el futuro (cuatro semanas a partir de hoy) publicaré el segundo mes de esta planificación.

Physical activity and health: Blisters

Hi everyone!


I hope you are doing well. Thank you very much for your support and interest.


I will begin this article by telling you that the good feelings felt during the marathon are maintained. In fact after swimming on Monday, today I started again my cycling workouts without any problem. A good nutrition has been essential to keep these good feelings, in a future article I will tell you a little about the new dietary guidelines that I follow and feelings I had during the process.




Today I will talk a bit about the annoying blisters. While physical activity is directly linked to welfarem, as a result of it there may be some unpleasant symptoms that are best avoided. From my point of view there are many factors that influence our feelings at the time of physical activity, some of them depend directly on us and others not, that is why we must do our part to control those factors we can handle. The less you have factors that may prevent us from enjoying the sport, our experience will be better.


Blisters can be very annoying, in fact its appearance can influence our performance and sensations entirely, and can make even a quiet walk in a pretty hard experience.


Blisters are bumps on the skin containing fluid, which is usually clear but sometimes takes on a bloody color.


They appear as a result of friction from shoes or clothing that repeatedly rub the skin resulting in friction burns. The outer and inner layers of the skin is separated and the space between them is full of lymph. This is a common problem particularly when the premiere athletes sneakers or hiking boots. They also often occur in people who are exceptionally long walking tours (marathon, trekking) due to friction maintained over time and excess moisture (sweat) and heat in the area.


The good news is that the blisters do not have to appear. This is why it is important to focus on prevention. Within this point there are simple tips that can help you to avoid them


1 .- It is important that shoes fit us well. It is important to make the move the shoe does not rub the skin occurs. Shoes too tight or too loose are more likely to cause problems.


2 .- To protect the foot (with bandages or patches) in areas where friction is present. This can prevent shoes rubbing bare skin at the same time to avoid a sensitive area and continue damaged.


3 .- Keep feet as dry as possible. There are many types of socks created for this purpose. The use of talcum powder may be useful.


4 .- The application of heat to the footwear, depending on the material it is built, you can change its shape and cause the problem.


5 .- Especially if trekking, we must pay special attention to the seams that might have our shoes inside. These are commonly causing blisters.


The first sign of friction is the reddening of the skin. After each workout, I recommend you take a few minutes to check your feet, this will help them detect potential blisters before they appear. If they already have appeared, it is important to cover with a patch. We must also worry about keeping our feet dry, changing our socks can help. Another measure, but only work on a short therm, is to add vaseline on the areas that we consider the blisters appear.


As measures of treatment, we can say that if the blister has not exploited it may be necessary to make a small hole with a pin on the edge of the blister, especially if it is in an area of support, such as sole. An easy way to sterilize the pin is passing through the flame of a lighter. If we continue the march the next day, we can move on wire from the pin so that once it crosses the blister is in order to absorb the liquid. It is important that the hole is made with a pin because we try to leave as much skin as possible covering the wound. This will act as an important protective layer for the underlying skin to help prevent infection. As a general rule, never cut the dry skin that is over the blister.


After the blister drained, we must clean the area with a damp washcloth or a liquid disinfectant (povidone-iodine, alcohol, etc..) And then we cover it with a patch. On this last point, it may be helpful to add the patch a bit of tape. Do not remove the patch until it falls by itself.


In conclusion I must say that we should never drain a blood filled blister!

Actividad física y salud: Ampollas

Espero se encuentren muy bien. Muchas gracias por su apoyo e interés.


Comenzaré esta entrega contándoles que las buenas sensaciones sentidas durante la maratón se mantienen. De hecho luego de nadar el día lunes, hoy retomé los entrenamientos de ciclismo sin problema alguno. La alimentación ha sido fundamental para mantener estas buenas sensaciones, en un próximo artículo les contaré un poco acerca de las nuevas pautas alimentarias que estoy siguiendo y de las sensaciones que he tenido durante el proceso.


Hoy hablaré un poco acerca de las molestas ampollas. Si bien la actividad física está directamente ligada con el bienestar, producto de ella pueden aparecer algunos síntomas molestos que es mejor evitar. Desde mi punto de vista hay múltiples factores que condicionan nuestras sensaciones a la hora de realizar actividad física, algunas de ellas dependen directamente de nosotros y otras no, es por esto que debemos poner todo de nuestra parte para controlar aquellos factores que podemos manejar. Mientras menos factores hayan que puedan impedir que disfrutemos del deporte, nuestra experiencia será mejor.


Las ampollas pueden ser muy molestas, de hecho su aparición puede condicionar completamente nuestro rendimiento y sensaciones, pudiendo convertir inclusive una tranquila caminata en una experiencia bastante dura. 


Las ampollas son protuberancias en la piel que contienen líquido, este suele ser transparente aunque algunas veces adquiere un color sanguinolento. 


Ellas se aparecen como consecuencia de la fricción de los zapatos o la ropa que rozan repetidamente con la piel dando lugar a quemaduras por fricción. Los estratos externo y interno de la piel se separan y el espacio entre ellos se llena de linfa. Esto constituye un problema común especialmente cuando los deportistas estrenan zapatillas o botas de montaña. También suelen aparecer en las personas que excepcionalmente hacen largos recorridos a pie (maratones, trekking) debido a fricciones mantenidas en el tiempo y un exceso de humedad (por el sudor) y de calor en la zona.


La buena noticia es que las ampollas no tienen por qué aparecer. Es por ello que es importante concentrarse en su prevención. Dentro de este punto hay consejos simples que pueden ayudarnos


1.- Es importante que el calzado nos calce bien. Es importante que al realizar el movimiento el zapato no produzca fricción con la piel. Calzados muy ajustados o muy flojos tienen más probabilidad de producir problemas.


2.- Proteger el pie (con vendajes o parches) en las zonas en que se presente la fricción. Esto puede evitar que el calzado roce directamente con la piel a la vez de evitar que una zona ya sensible continúe dañándose.


3.- Mantener los pies lo más seco posible. Existen bastantes tipos de calcetines creados para este efecto. El uso de polvo de talco puede ser de utilidad.


4.- La aplicación de calor sobre el calzado, dependiendo del material en que esté construido, puede cambiar su forma y producir el problema.


5.- Sobre todo si practicamos trekking, debemos poner especial atención a las costuras que pueda tener nuestro calzado en el interior. Éstas son comúnmente causantes de la aparición de ampollas.


El primer síntoma de roce es el enrojecimiento de la piel. Luego de cada entrenamiento, les recomiendo tomar algunos minutos para revisar sus pies, esto les ayudará a detectar potenciales ampollas antes de que éstas aparezcan. En caso de que ellas ya hayan aparecido, es importante cubrirlas con un parche. Debemos además preocuparnos de mantener nuestros pies secos, cambiar nuestros calcetines puede ayudar. Otra medida, aunque sólo funcionará de manera provisoria, es adicionar vaselina en las zonas que podamos considerar que las ampollas aparecerán.


Como medidas de tratamiento, podemos decir que si la ampolla no ha explotado puede ser necesario hacer un pequeño agujero con un alfiler en el borde de la ampolla, especialmente si ésta se encuentra en una superficie de apoyo, como la planta del pie. Una forma sencilla de esterilizar el alfiler es pasándolo a través de la llama de un mechero. Si debemos continuar la marcha al día siguiente, podemos pasar en hilo por el alfiler de manera que una vez que éste atraviese la ampolla se quede dentro para así absorber el líquido. Es importante que el agujero sea hecho con un alfiler pues debemos procurar dejar tanta piel como sea posible cubriendo la herida. Esto actuará como un estrato protector muy importante para la piel subyacente que ayudará a impedir cualquier infección. Como regla general, nunca debe cortarse la piel seca que quede sobre la ampolla. 


Luego de vaciada la ampolla, debemos limpiar la zona con una toallita húmeda o con un líquido desinfectante (povidona yodada, alcohol, etc.) y luego debemos cubrirla con un parche. En este último punto, puede ser de utilidad agregar sobre el parche un poco de cinta adhesiva. No retiren el parche hasta que él caiga por si mismo.

Para terminar debemos diré que nunca debemos vaciar una ampolla llena de sangre!!

Nice-Cannes Marathon

Again I would like to thank you for your support. Thanks to all who visit this blog and those who have clicked on the facebook link. To have support in the road to a new adventure is very important. I hope that the topics covered in this blog are of your interest, and that is why I invite you to submit your questions!

Today I'll talk a little about the development of the Nice-Cannes marathon. It all started in saturday morning, an easy jog then a few miles of cycling, all quite mild, the idea behind this type of works before or after either competition or training, it is increasing blood flow and, in the absence of a major muscle work, increase with that the rate at which nutrients reach our muscles. There are many mechanisms that are initiated with physically active, our body is not just consuming calories, but also striving to nurture better and if accompanied by an intake of quality nutrients, then ultimately this results in a faster recovery or a better set-up. The rest of the day was quite entertaining. Together with Erwan, a French friend, we were dedicated to clean our bikes, which is very important, it allows us to detect potential mechanical problems, but also because it increases the useful life of components.

At the end of the day came the expected pasta party, on this point, I will say that while the consumption of pasta during the training period is not the healthiest choice, that given the low nutritional value of refined foods and the potential for dehydration that accompanies this kind of food, concepts change just before the races since the objective is to maximize the performance and not health. It was a great time, a good film of motivation and very good company, Erwan, Karl and David (all runners!).

The night was not the best. For some reason, that I think I came to realize, my dream has become quite light. This brings me no problems during the day, but still gets a little annoying at night, especially before a race and especially if you to get up before six in the morning to catch the train.

During the morning a good smoothie, an energy bar (banana flavor) and began the journey to the train station in Nice ending a 10-minute jog from the start of the marathon. It was pretty hard! There are many people involved in events like this around here, so the train was full, in fact I managed to take the train about thirty minutes later than planned. I arrived in Nice and then jog a bit, I found Rodrigo y Consuelo, two very good Chilean friends, they arrived to live in Nice almost a month ago and they enjoy the sport's practice as much as I  do. We made it to time with Rodrigo at the start and place us in a good position. A little further we find Erwan and Karl, which was very good news because the initial plan was to try to run together the marathon in 3:15, although this was slightly faster than my expectations.

The race began with fifteen minutes late due to the huge number of people who used the train as transportation. The first kilometer was a bit slower than the average rate at which we had to run, but we soon recovered the difference. The land is beautiful, is a race along the coast from Nice to the city of Cannes (famous for its film festival). Supply positions arrived really soon and the good company and good feelings meant that the first few miles were fairly straightforward. After a few kilometers, nature called, I mention this to advise you, if that occurs you at some time, especially in the first few miles, it is better to listen the call. Failure to heed may have a considerable influence on your performance and the longer you postpone, the effects are more harmful. It costs me meet with the group, although this represented a slight tightening for at least a mile. While the race takes place between locations, there are several small towns between Nice and Cannes, allowing that throughout the race has much support from spectators. That always helps, I love to motivate people to give encouragement to other runners, especially for endurance events, support from a stranger can fill you with courage when your energy is flagging. Everything went very well at the level of feelings, it was also nice to see people of all ages, sizes, textures, races, all together for the same reasons, traveling the same road, accompanied. Each has a different history, different motivations, different preparations, customs, rhythms of life and yet we were all there, in the same place, treading the same footsteps of those, already long before, had walked this path.

Everything was even better than planned, we were a few seconds on average which was good because last kilometer 23, the race really began. This is because while the coastal route is fairly flat, past the 23 km the outstanding terrain becomes something a little bit hard. I must say that the slopes are hard in both directions when you are running in this type of events, so overall time wasted is easily retrieved when you go down . For me this was not an issue at the level of feelings going well and to see Rodrigo and Erwan in such good condition, my forces revitalized. It was not my first time, and I must say that running as a group, besides being a very nice experience can help you much in terms of motivation. 21th km, we arrived at Antibes, which is the city where I live. Here we found some partners of our triathlon club (Antibes triathlon) who kindly being delivered isotonic gels and drinks to the riders. Great help!

We got to mile 23 and started climbing. Was considerably less heavy than I expected, we were all with excellent feel and Erwan took the responsibility of taking car of our pace, to avoid running too fast and keeping the good feelings.Thanks Erwan!

Rodrigo was very good, strong at all times. He was the only other Chilean running the marathon so it was always a pleasure to ride with a fellow in these foreign lands so far apart.

The ups and downs continued, it was really a run, along with some shots of the coastline, beautiful countryside to join us, which, together with a perfect climate (18 ° C) helped greatly to maintain the good feelings. In a forthcoming talk I will talk about nutrition before, during and after these types of events, because from my point of view, it plays a crucial role.

Everything went as planned. Several people, about 12,000 people started, so we were accompanied at all times, maintained a fairly consistent pace which allowed us to overcome many people who perhaps started too fast.

Upon arrival at kilometer 32, we still maintain the agreed rate but given the good feeling it was time to push a little. Strangely, I am much more comfortable jogging at a pace of 3:45 to 4:00 minutes per kilometer than 4:37 which was the rhythm that brought us to this point, so I pressed a lot. I felt very strong so I went in that direction, without forgetting to take water supplies and remember the famous saying
"Shower your self with the water that you are not drinking up."

The arrival in Cannes was amazing, it's a very nice environment, the route backs to the coastline and there were many spectators, bands and colors. We breathed the atmosphere of the marathon in the air, a city mobilized to welcome all runners.


At the end
I finished in 3 hours 09 minutes. Not my best time in a marathon, but excellent given my expectations and plans. Especially since I had throughout the race the best feelings. Reflection of this is that I burned 2092cal that is a small amount for a marathon. Economy is really important!!

The results were wonderful, Erwan and Rodrigo broke both his best individual marks, and Karl did an outstanding career.

Some miles jogging, stretching and a small entry into the calm waters lapping at the shoreline of Cannes, accompanied by Consuelo who managed to reach the goal before us despite how difficult it became the entrance to the city, completed a wonderful day.

I want to thank Consuelo enormously for their support and for being the muse of my friend Rodrigo, Susana (my mother) and  Carlita (my girlfriend) for always joining me in spirit at every challenge no matter the long distance, and especially Rodrigo and Erwan  to allow me to join them in my third marathon of the year.

I would like to finish by saying that even if it was not my best time, I can say that it was one of the greatest runs that I ever made. Keep that in mind, many times the searching of performance can makes us to forget that there are other things beyond, which are often more important.

Maratón Nice-Cannes

Hola a todos!

Nuevamente me gustaría agradecer su apoyo. Muchas gracias a todos quienes visitan este blog y a quienes han pulsado sobre el enlace de facebook. Tener apoyo al emprender el camino hacia una nueva aventura es muy importante. Espero que los temas que se traten en este blog sean de su interés, es por eso que los invito a presentar sus dudas!!

Hoy hablaré un poco del desarrollo de la maratón Nice-Cannes. Comenzaré por decir que todo comenzó ayer, un trote suave durante la mañana y luego unos pocos kilómetros de ciclismo, todo bastante suave, la idea detrás de este tipo de trabajos antes o después, ya sea de una competencia o de un entrenamiento, es aumentar el flujo sanguíneo y al no haber un importante trabajo muscular, aumentar con eso la velocidad con la que los nutrientes llegan a nuestros músculos. Hay muchos mecanismos que se ponen en marcha a la hora de practicar actividad física, no sólo consumimos calorías, sino que también nuestro cuerpo se esfuerza por nutrirse mejor y si está acompañado de una ingesta de nutrientes de calidad, entonces a fin de cuentas, esto se traduce en una recuperación más rápida o en una mejor "puesta a punto". El resto del día fue bastante entretenido. Junto a Erwan, un amigo francés, nos dedicamos a limpiar nuestras bicicletas, lo que es muy importante, pues nos permite detectar potenciales problemas mecánicos, pero también porque aumenta considerablemente la vida útil de los componentes.

Al fin del día llegó al esperada tallarinata, respecto a este punto, diré que si bien el consumo de pastas durante el período de entrenamiento  no es la elección más saludable, esto dado el bajo valor nutricional de los alimentos refinados y el potencial proceso de deshidratación que acompaña a este tipo de comidas, los conceptos cambian poco antes de las carreras pues el objetivo es de maximizar el rendimiento y no la salud. Fue un muy buen momento, una buena película de motivación y muy buena compañía, Erwan, Karl y David.

La noche no fue de lo mejor. Por algún motivo que creo ya llegué a comprender, mi sueño se ha vuelto bastante ligero, esto no me supone problemas durante el día, pero de todas formas se vuelve algo molesto durante la noche, sobre todo antes de una carrera y sobre todo si tienes que levantarte antes de las seis de la mañana para tomar el tren.

Durante la mañana un buen batido de frutas, una barra energética de plátano y comencé el trayecto hacia la estación de tren que terminaría en Nice a unos 10 minutos a trote suave de la partida de la maratón. Fue bastante difícil! Hay mucha gente que participa en eventos como este por estos lados, así que el tren iba completo, de hecho logré tomar el tren unos treinta minutos después de lo previsto. Llegué a Nice y luego de trotar un poco, encontré a Rodrigo y Consuelo, dos muy buenos amigos chilenos que viven hacia algunos meses en Nice y que disfrutan tanto como yo del deporte. Logramos llegar a tiempo junto a Rodrigo a la largada y a ubicarnos en una buena posición. A poco andar encontramos a Erwan y Karl, lo que fue una muy buena noticia porque el plan inicial fue intentar correr juntos la maratón en 3:15, aunque esto era un poco más rápido que las mis expectativas.

La carrera comenzó con quince minutos de retraso debido a la enorme cantidad de gente que utilizó el tren como medio de transporte. El primer kilómetro fue un poco más lento que el ritmo medio al que debíamos correr, pero recuperamos pronto la diferencia. El terreno es muy bonito, es una carrera que recorre la costa desde Nice hasta la cuidad de Cannes (famosa por su festival de cine). Los puestos de abastecimiento no tardaron en llegar y la buena compañía y las buenas sensaciones hicieron que los primeros kilómetros fueran bastante sencillos. Pasados algunos kilómetros, llamó la naturaleza, menciono esto para recomendarles que si les ocurre en alguna oportunidad, sobre todo en los primeros kilómetros, es mejor acudir al llamado. El hacer caso omiso puede tener una influencia considerable sobre su rendimiento y mientras más se aplace, los efectos son más nocivos. No me costó reunirme con el grupo, aunque esto supuso apretar un poco durante al menos un kilómetro. Si bien la carrera se desarrolla entre localidades, hay varias pequeñas ciudades entre Nice y Cannes, lo que permite que a lo largo de toda la carrera haya mucho apoyo de espectadores. Eso siempre ayuda, me encanta motivar a la gente a dar ánimo a los otros corredores, pues sobre todo en pruebas de resistencia, el apoyo de un desconocido puede llenarte de coraje cuando las fuerzas flaquean. Todo seguía muy bien a nivel de sensaciones, era muy bonito ver también a personas de todas las edades, tamaños, contexturas, razas unidos por la misma motivación, recorriendo el mismo camino, acompañándose. Cada uno tiene una historia diferente, diferentes motivaciones, diferentes preparaciones, costumbres, ritmos de vida y sin embargo estábamos todos ahí, en el mismo lugar, pisando las mismas huellas de aquellos que ya, mucho antes que nosotros, habían pisado ese camino.

Todo seguía incluso mejor que lo planificado, estábamos algunos segundos bajo la media lo cuál era bueno pues pasado el kilómetro 23, comenzaba realmente la carrera. Esto dado que si bien la ruta por el borde costero es bastante plana, pasado el kilómetro 23 hay pendientes bastante importantes y el terreno se vuelve algo duro. Debo decir que las pendientes son duras en ambos sentidos cuando uno corre este tipo de pruebas, así que en general el tiempo perdido subiendo no se recupera fácilmente al bajar. Para mi esto no  suponía un problema, a nivel de sensaciones iba muy bien y al ver a Rodrigo y Erwan en tan buen estado, mis fuerzas de revitalizaban. No ha sido mi primera vez, y debo decir que correr en grupo, además de ser una muy bonita experiencia puede ayudaros mucho en términos de motivación. Llegado el kilómetro 21 entramos a Antibes, que es la ciudad en la que resido. Ahí encontramos en el abastecimiento a algunos miembros de nuestro club de triatlón (Antibes triatlón) que gentilmente estaban entregando geles y bebida isotónica a los corredores. Gran ayuda!!

Llegamos al kilómetro 23 y empezamos a subir. Fue bastante menos pesado de lo que esperaba, seguíamos todos con excelentes sensaciones y afortunadamente Erwan se encargaba de recordarme el ritmo acordado, lo que evitaba correr demasiado rápido y por consecuente, mantener las buenas sensaciones. Gracias Erwan!

Rodrigo seguía muy bien, fuerte en todo momento. Él era el único otro chileno corriendo la maratón por lo que fue en todo momento un placer correr junto a un compatriota en estas tierras ajenas, tan lejanas.

Las subidas y bajadas continuaron, era realmente una seguidilla, acompañada de algunos planos por el borde costero, un paisaje maravilloso para acompañarnos, lo que, acompañado de un clima perfecto (18°C) ayudaba de sobremanera a mantener las buenas sensaciones. En alguna próxima publicación hablaré de la nutrición antes, durante y después de este tipo de eventos, pues desde mi punto de vista, ella juega un rol crucial.

Todo seguía según lo previsto. Bastante gente, cerca de 12.000 personas comenzaron, por lo que estábamos acompañados en todo momento, manteníamos un ritmo bastante consecuente y eso nos permitió sobrepasar a muchas personas que comenzaron quizás demasiado rápido.

Al llegar al kilómetro 32, seguíamos manteniendo el ritmo acordado pero dadas las buenas sensaciones fue tiempo de apretar un poco. Extrañamente, me es mucho más cómodo trotar a un ritmo de 3:45-4:00 minutos por kilómetro que a 4:37 que era el ritmo que traíamos hasta ese punto por lo que apreté bastante. Me sentía muy fuerte así que seguí en esa senda, sin olvidar tomar agua en los abastecimientos y recordar el famoso dicho
"Agua que no has de beber échatela encima".

La llegada a Cannes fue maravillosa, es un muy bonito entorno, la ruta retoma el borde costero y habían muchos espectadores, bandas de música y colores. Se respiraba el ambiente de la maratón en el aire, una ciudad movilizada para recibir a todos los corredores.

Terminé en 3 horas 09 minutos. Que si bien no es mi mejor tiempo en una maratón, es excelente dadas mis espectativas y planes. Sobre todo porque tuve durante toda la carrera las mejores sensaciones. Reflejo de esto es que quemé 2092cal que es bastante poco para una maratón.

Los resultados fueron maravillosos, Erwan y Rodrigo batieron ambos sus mejores marcas individuales, y Karl  hizo una carrera excepcional.

Algunos kilómetros de trote suave, elongación y una pequeña entrada en las apacibles aguas que mojan el borde costero de Cannes, acompañados de Consuelo que logró llegar a la meta antes que nosotros a pesar de lo difícil que se volvió el acceso a la ciudad, consumaron una jornada maravillosa.

Quiero agradecer enormemente a Consuelo por su apoyo y por ser la musa inspiradora de mi amigo Rodrigo, a Carlita y Susana (mi madre) por acompañarme siempre aunque sea a la distancia en estos desafíos y especialmente a Erwan y Rodrigo por permitirme correr junto a ellos mi tercera maratón del año.

Hydration and Training PART I

Hi everyone!

I would first of all, thank you all for your support. It was nice to see that this initiative has been accepted and have already begun to see the first questions to arise.

Following what is the tone of this blog, I will begin by telling you a little bit of my daily practice, feelings, and perhaps some of the ideas behind them.

This Sunday I am running in the Nice-Cannes Marathon, 42.195 k by the waterfront, really a wonderful landscape and this year will involve at least 11,000 runners from around the world.

I have thought of running with some friends, but I will consider it as training. I started training again after the Nice's IRONMAN a month ago and my expectations are consistent with that fact.

In view of this today jogging was smooth. The idea, after a good warm up was to get my legs used to the pace I hope to have in the race to avoid splitting it too fast (this is crucial when covering long distances), then a good cool down , stretching and the inevitable post-workout shake. I felt very good, but I think I'm missing a few hours of sleep.

In a future post I will talk about the structure of training and post-workout's nutrition important to accompany the practice of any type of physical activity.

Responding to concerns raised by one of you today's topic will be HYDRATION AND TRAINING.

PART I: Short-term training.

Hydration is the mainstay of our diet, some authors even propose a reformulation of the food pyramid, saying that this should include water as a base (see [1]). This is not a strange process, because the composition of our body is in a 45.5 to 60.6% water (see [4]), and changes in this ratio can have consequences ranging from changes in thermal regulatory capacity  and homeostatic imbalance, if the loss is around 2%, to cardiac arrest and death if the loss is between 7-10% (see [2] [3]). It is for this reason that any person who decides to venture into the practice of physical activity should strive to include an adequate intake of fluids during the day, this process not limited only to periods of training.

Anyway, with the aim of reassuring, we will do some calculations.
Consider a 26-year-old men of 70 kg. weight. Since the composition of water in the body is between 60 and 65% (for this age), then an adult with these characteristics has on average 42 to 45.5 kg. water. A loss of 2%, is then translated into a loss of 1.4 kg. and a loss of between 7-10% will be 4.9 to 7 kg. Which appears to be to much, reason why we should be quiet about it.

An important factor to consider is that the sensation of thirst is an advanced symptom of dehydration (thirst appears to have lost 1% by weight), is for this reason that during the practice of physical activity should not be expected to appear this symptom to begin the intake of fluids.

While the loss of body water increases significantly with physical activity, the good news is that our body produces water by metabolizing food, it is for this reason that if physical activity is of low intensity and short duration (less than one hour), unless carried out in a hot environment, extra water intake is not needed. Anyway, it's a good idea to drink small amounts of liquid every twenty or thirty minutes, again as part of a light-moderate activity.

Overall consumption of beverages with added sugar is not necessary for activities lasting less than an hour, given that the body can sustain them through the glycogen reservoirs.

Considering the above, general guidelines for proper hydration in the presence of regular physical activity of light-moderate intensity are as follows,

1 .- Drinking fluids before, during and after training. It is very important to create the habit of consuming fluids during training, and that this could be uncomfortable in the absence of practice.

2 .- Drink at least 2 to 2.5 liters of water a day. You should drink 500 ml. of water two hours before exercise and 500 ml. additional 30 min. before, and 120 - 200 ml. every 15-20 minutes during activity.

3 .- Avoid drinking diuretics such as alcohol, tea, soft drinks.

4 .- Avoid adding salt to food. Adding salt to foods can increase the speed in which the body loses salt through sweat during physical activity.

The considerations change according to the conditions and type of activity. In a next post I will talk about hydration in extreme conditions, both in intensity and environmental.

Being clear about the importance of hydration for any person engaged in physical activity, the possible consequences of poor hydration and basic recommendations to include in our daily life, now I will try to give a precise answer to the question of Carolina.

To me, hydration is an essential issue, often made the mistake of not taking care of my hydration and suffered the consequences of such carelessness. Certainly, the fluid intake is much more comfortable during cycling than jogging, although it is clear that it is important for both activities. To solve the problem of hydration during training running, I implemented three types of solutions

1 .- Use of accessory created for liquid transport.
It is the most expensive option but in my opinion the best. There are a lot of brands that have solved the problem by creating accessories specially designed for it, these range from belts to bags. They have the advantage that you can prepare some kind of special drink for longer or more intense sessions.

2 .- Training in a circuit with water intakes.
It is not uncommon to find instances where we can drink water in our way of training. The defect is that we stop to it, but ultimately this is far better to suffer the effects of dehydration, a good idea is to pick tracks where you know in advance that you will have the opportunity to take water at regular intervals .

3 .- "Hiding a bottle."
You can leave your house with a bottle filled with water and leave it somewhere in the circuit that you know you'll pass with regularly. Remember that you should be drinking fluids every 15-20 minutes of activity, so you won't have to visit too often "the hiding place."

I hope these small indications have been helpful. I want to remark that the process of sweating also entails a significant loss of nutrients, dI will speak a little bit of this fact in the next publication because if training is of short duration and mild to moderate intensity, this aspect does not play a crucial role.
